Triumph – River Boys

The photographs I was trying to create for my Triumph post didn’t turn out. So, I have decided to make my Triumph post about my young friends at the river. They were at the river the day I went to do some photographing and I asked them if I could photograph them. They were only too happy to do so  and enjoyed posing. LOL.  This post is for them.

2:00 am Wake Up Emergency?

I was in bed asleep and the dogs started barking. It woke me up and there was someone knocking at my door. It scared me to death! Who knocks on someone's door at 2:00 am in the morning!? It had to be an emergency!

I got up and came into my living room and yelled, “Who is it!?” I wasn't about to open my door until I knew.

A little voice said, “Sandy.” I opened the door and Sandy said, “Can I have two pieces of bread?”

I won't tell you what I said last night because it wasn't very nice, but this morning, I can't stop laughing. Do you think it's because I'm tired?

My Day of Canning

How boring can a post get when it says, “Hi Everyone! I have been “canning” all day! Sounds so “grandma” doesn't it? Actually, I like to can and I can as much as possible (especially with the price of groceries). My canning batch for the day? Twelve quarts of chile. (This picture only shows seven quarts because there are five quarts still in the Pressure Cooker).

I cooked the Chile all morning. My special “made up” Chile Recipe. Delicious!

Kim, owner of blog, Quiet Desperation started it. At the end of last year she wrote on her blog that she was having Chile and I have not been able to stop thinking about it. (Besides, what is better on cold days, than a nice warm bowl of Chile?)

This is my Chile Recipe:

8 Cups of Dry Pinto Beans (soak overnight and cook with 10 cups of water the next morning).


2 packages of corn kernels

2 tubs of Chopped Green Chile (I use Mild, but you can use hotter if you prefer).

**3 cubes of Cilantro (I will explain this at the end).

2 large cans of diced tomatoes (put in the blender and puree) – I do this instead of using Tomato Sauce (I don't like the “heaviness of the Tomato Sauce).

2 regular sized cans of diced tomatoes (do not puree)

2 onions, chopped and sauteed until transparent

2 pounds of ground beef (cooked)

2 pounds of ground sausage (cooked)

3 Bay Leafs

Approximately 2 Tablespoons of Chile Powder

Approximately 1 Tablespoon of Salt (Taste First)

4 sections of Garlic, chopped fine

Taste often and adjust recipe according to your taste. (Take out Bay leaves when done).

Because this makes 15 quarts of Chile, you could half the recipe (or quarter it). If you do not “can”, you can also freeze it in Freezer bags or Freezer Containers.

**I grow my Cilantro and when I harvest it, I wash it well and freeze it with water in ice cube trays then bag the cubes. (You could also use dry Cilantro or no Cilantro, depending on your taste).


Passion: My First Crush

I remember my first big crush. I thought I was so in love with him, but he hardly ever even gave me a second look. He had graduated from high school and I was just beginning high school. I met him through mutual friends. He worked at a major shoe store chain and I would drag my friends with me to go see him at his store. (I am pretty sure now that I came across as a young annoying high school girl chasing him, which was true).

My school notebooks were filled with his name; John. I wrote John all over the front of my school binders. I wanted so much for him to pay attention to me and fall madly in love with me. John, John, John. I dreamed about John. I become completely consumed with John.

I hoped, I wished, I prayed, I made my presence known. I hung out at the store where he worked as much as possible.

Finally! He asked me out for a date. I was on cloud nine. It was my dream come true! I could hardly wait! I climbed into his truck not knowing where we were going for our “date.” To my dismay, he took me to high school kegger (kegs of beer) at “the river”. This “keg party” was full of kids all of whom were inebriated. I don't drink, so I was fully sober. There were only two dirt roads going into the camp from the highway.

Suddenly, with no warning, four police cars came roaring into the kegger camp with their siren and lights exploding; two police cars coming in from each of the two roads. All the kids were blocked in and unable to drive away (which was a good thing). Kids were running in all directions trying to get away. I found a large bush and climbed into the middle of it and stayed perfectly still and quiet. I heard kids screaming. I heard kids being put into the police cars. I heard a lot of confusion happening.

Finally, the area became very quiet. The police were long gone with the ones that had been caught. They were on their way to the police station. There, the police would call their parents to come get them. Only a few were left behind, and I was one of those few. I crawled out of my hiding place and finally found John.

Sadly, this was my “dream” date with my “dream boy” John.

He never asked me out again.

But I was okay with that.

After all, John was fickle.

Don’t Throw the Old Dog Out!

If you haven't figured this out by now, I have a huge and very kind heart. (Well.. most of the time). My neighbors across from me are moving into an apartment where they cannot take their animals and they have a whole menagerie of animals. I get so frustrated with them because they get new precious puppies,. don't get the innoculated and they die of Parvo. It makes me want to SCREAM! Half the time they don't even have enough money to feed the ones they have but they keep getting more. More dogs. More cats.

NOW, Back to the story of their apartment. They have to find homes for the animals or take them to the local animal shelter. They have an old dog that they are just going to take and have put down. They have four cats they said they are just going to leave behind and let the fend on their own. Again, I am SCREAMING inside. “You can't just leave your animals to fend for themselves! That's mean!” So, they started finding homes for their dogs, except for one, the old dog, Beth.

Tonight I asked them what they are going to do with Beth. I was told they were going to have her put down. I said, (weak moment), I will take Beth. She said, “Really? Are you sure?” “Yes, I am sure.”

Why did I agree to this? Because Beth has spent most of her life chained up and neglected. Finally she was given a fenced in yard. But she is strictly an outside dog over there. With me and in my house, I want her to think she has died and gone to heaven.

She will sleep inside where it is warm at night. In the summer she will be inside where it is cool. She will have plenty of food, attention, and her very own bed. (and a few treats here and there). I know if she was taken to the Animal Shelter she would not be considered an adoptable dog and her days would be numbered.

Soon my home will be graced by two new fur family members, Beth, the old dog, and Oreo, the Black and White Cat. I will be changing Beth's name because I don't want to remember the horrible conditons she came from. Oreo is a long hair black and white male cat they were going to take to the shelter. Please give me some suggestions on new names for Beth and Oreo. Thank you!
